At Rydges World Square, this shift has shaped their newly refreshed delegate menu, crafted by Executive Chef Matthew Lambert.
Rather than leaning on familiar conference staples, Lambert has taken a thoughtful and nourishing approach. The menu introduces vibrant options designed to support delegates through long agendas and complex conversations, with flavours that feel fresh, honest and intentionally balanced.
Premium touches that elevate the meeting experience
Alongside core crowd-pleasers, Lambert has developed premium items that bring an elevated touch to meetings. Think organic flaxseed smoothies blended with banana, yoghurt, honey and peanut butter; detox juices bright with carrot, lemon, ginger and mint; and a super-charged green blend featuring cucumber, coconut water and apple.
For those preferring something more substantial, the menu features smoked salmon bagels with cream cheese, blue swimmer crab brioche with sriracha lime mayo, and mini falafel brioche buns finished with hummus and yoghurt. Classic options include pulled chicken baguettes layered with organic mayo, lemon zest, roasted almonds and peppery arugula.
Comfort meets wellness
The slower, comforting moments aren't forgotten. Yoghurt pots made with sheep's milk and roasted almonds, and overnight oats enriched with chia, berry compote and macadamias deliver meeting break options that feel both wholesome and quietly indulgent.
